I put all the guppies in a 55 gallon. Now I only have a pleco and a pristella tetra left. What are some fish for a 10 gallon that won't eat my plants?

Most fish won't touch your plants.  I would stay away from mollies and other livebearers, though, since they tend to graze and that could cause damage (as you've seen by now).  Most other fish won't bug your plants, with the exception of large herbivores like plecos.  And most of their damage is actually done when they uproot plants with their digging rather than actually eating the leaves.
